Zuppa Toscana

Ok, recipe for the soup tonight is....

1 pkg Italian sausage ( I used hot , you can also make your own.)
3 or 4 Large russet potatoes quartered and thinly sliced
1 large onion, finely chopped... See More
4 or 5 cloves of garlic, minced ( I really like garlic )
1 bunch Kale chopped or torn into bite sized pieces ( you could use less if you wanted)
3/4 box of chicken broth or approx 2 cans
1 qt of water
approx 1 c of heavy cream
1/2 c to 1 c bacon cooked and chopped into small pieces
Salt and pepper

Cook sausage in a 300 degree over for about 30 min. Drain on paper towels to remove grease and cut into slices.

Place a tiny bit of olive oil in your pot, heat on low, sautee garlic and onion until softened. Add chicken broth, water, and potatoes. Cook until potatoes are done. Add the sausage and bacon to pot. Salt and pepper to taste. Bring up to a simmer, simmer about 10 minutes. Turn heat down to low, add kale and cream. Heat through and serve.

I reserved a bit of the bacon to sprinkle on top of the soup. :D
