Sometimes you just need a steak. This is a slightly different take on it.
1/2 green bell pepper, chopped
1 medium yellow onion, chopped
3 garlic cloves, finely diced
1-2 c spinach
5-6 baby bella mushrooms, sliced
2 Tbsp butter
1/2 c creme
2 big fat juicy steaks
Season steaks with salt and pepper. Cook steaks in a little melted butter and olive oil until they almost reach your desired doneness. Remove and cover with tinfoil. Make sure you remove them before they're done, they will continue to cook a bit since we've tented them to let them rest.
In the same skillet add garlic, onion, and bell pepper. Saute until softened. Add spinach, cook until wilted. Add sliced mushrooms and cook about a minute. Remove from heat and add butter and creme.
Slice your steaks and lay on a bed of mashed potatoes, or mashed garlic beans. Cover with vegetable mixture.
